There are many ways to prepare it,
this is currently my favorite way:
Cook 1 cup quinoa, rinse in cold water
Blanch 1 lb. shelled fava beans (frozen)
Segment 2 lemons
Slice 2 avocados- thin
Thinly slice a handful of radishes
Add quinoa, beans, 2 minced garlic cloves,
radishes, finely chopped basil, lemons (and juice),
avocados, 1 tbsp ground cumin, 1/3 cup olive oil,
1/4 tsp chili flakes, salt & pepper,
toss.
