Pumpkin Chocolate Chip Cookies


1 c. sugar
1 c. pumpkin
1/2 c. oil
1 egg

Mix.
Add sifted:

2 c. flour
1/2 tsp. salt
1 tsp. cinnamon
2 tsp. baking powder

Dissolve.
Add:

1tsp. baking soda
1 tsp. milk
1 tsp. vanilla
1 c. chocolate chips

Preheat oven to 375 degrees.  Bake 10-12 minutes.
Careful not to over bake.  Cookies will be soft and moist.

Heavenly.

Addiction #24: Quinoa

I love quinoa.  I crave quinoa.
There are many ways to prepare it,
this is currently my favorite way:

Cook 1 cup quinoa, rinse in cold water
Blanch 1 lb. shelled fava beans (frozen)
Segment 2 lemons
Slice 2 avocados- thin
Thinly slice a handful of radishes

Add quinoa, beans, 2 minced garlic cloves,
radishes, finely chopped basil, lemons (and juice),
avocados, 1 tbsp ground cumin, 1/3 cup olive oil,
1/4 tsp chili flakes, salt & pepper,
toss.
